Salmon has become my favorite fish, other than beer battered cod. It is fresh, full of good vitamins and easy to cook. This recipe is simple, but gives you a moist, flaky fresh tasting salmon that can be pared with many sides and can be changed by switching up the herb or adding more. On top of the taste and simple cooking, a whole fish gives a simple and fresh presentation when laid out for guests.

Lemon and Thyme Salmon
Salmon
Extra Virgin Olive Oil
Pepper
Celery Salt
Fresh Thyme 1 tsp, plus a few sprigs
Lemon Slices

Pre-heat oven to 350. On a cooking sheet oil with EVOO, place salmon skin side down and brush or drizzle with EVOO. Sprinkle with celery salt, pepper and thyme. Top with lemon slices and a few sprigs of thyme. Bake in the oven for 15-20 minutes.
