Potato and Sausage Breakfast Bake

Breakfast is the most important meal of the day they say, but since I am not a morning person breakfast isn’t a priority usually. That has changed since I have started to make make-ahead breakfasts.

The mornings are ruff for me so I have started to ensure a healthy breakfasts by making breakfast the night before or at the beginning of the week. This potato and sausage egg bake is perfect to make ahead and really it is so versatile you can change and add whatever you want. You could even use leftovers. In this recipe I decided to make my own homemade breakfast sausage and it turned out great.

Potato and Sausage Egg Bake

4 lg russet potatoes peeled and baked in microwave until fork tender
1 lb sausage (Below is my breakfast sausage recipe)
12 eggs beaten seasoned

Pre-heat oven to 350. Brown the sausage. Dice the pre-cooked potatoes and layer in 9×13 baking dish. Put the sausage on top and pour in the beaten eggs. Bake until cooked 25-30 minutes.

Benbri Breakfast Sausage

1 lb ground pork
1 tbsp fresh minced sage
1/4 tsp garlic powder
1/2 tsp parsley
1/4 tumeric
1/8 paprika
salt and pepper

Mix seasoning and ground pork together.  Cook over medium heat until cooked.

Quick Simple Salsa

2 diced roma tomatoes
1 minced garlic
1 shallot finely diced
1 tbsp parsley or cilantro minced
salt and pepper

Combine all ingredients in a bowl and leave overnight to allow flavors to combine.
